On the way to Delmarva beaches on weekends, there are often chicken stands run by local Rotary or Kiwanis clubs, church groups or firefighter associations selling this Eastern Shore favorite. Use this recipe as a guideline~ you might want more Old Bay seasoning and hot sauce in it. Enjoy. Tom~
Eastern Shore BBQ Chicken
2 chicken halves / 1 cup vegetable oil / 1 cup apple cider vinegar / 2 tablespoons poultry seasoning / 1 teaspoon salt / 1 teaspoon Old Bay seasoning /1 teaspoon black pepper / 2 teaspoons hot sauce / ½ teaspoon paprika
Mix all the ingredients, taste, and add more seasoning if you like. Use ½ of this mixture to marinate the chicken 3 hours to overnight. Grill chicken halves, turning frequently and basting with the sauce at least 6 times. Dab on more sauce just before removing chicken from the grill and just before serving. I serve the chicken with sauce on the side (the sauce is also good on corn). If you want more smoke flavor in your chicken, soak mesquite or hickory wood chips in water for 30 minutes and add to your grill while grilling your chicken.
