This weekend was a busy one for me so I decided to get my 13-year-old son involved. I suggested that he choose what we would have for dinner. I told him he could use cookbooks or the internet but it was completely up to him. Well, about 15 minutes later, he said, “Mom, can I be responsible for the whole thing?!” My response was a resounding, “SURE!”

So he chose the menu, shopped for (along with my husband) and then prepared dinner. The menu: garlic-lime chicken, spaghetti squash sauteed with onions and garlickly broccoli. It was fantastic! The chicken was so tender and tasty and the side dishes complimented the main dish perfectly. The only problem is that now I want him to make dinner every night. HAHA

So the next time you are having a busy day, get your kids involved…they just might surprise you.
