This elegant wild rice chicken salad is a perfect summer meal and is one of my favorites. It is easy to make, and is packed with flavor. The grapes and cashews bring it to another level. Enjoy.
Wild Rice Chicken Salad
1 cup uncooked wild rice / Seasoned salt / 1/2 teaspoon ground cumin / 2 cups diced cooked chicken / 1 1/2 cups halved green grapes / 1 cup sliced water chestnuts, drained / 3/4 cup mayonnaise / 1 cup cashews
Cook rice according to package directions. Cool to room temperature. Spoon rice into a large bowl; add chicken, grapes, water chestnuts, mayonnaise, seasoned salt (your favorite) and cumin. Toss gently with a fork. Cover and chill. Just before serving, add the cashews. Serve on lettuce leaves or fill croissants. This recipe makes about 6 servings.
