Trinidad Curried Shrimp
1 pound large shrimp, shelled and deveined / 3 scallions, white and green parts, minced / 1 small onion, chopped / 1/2 teaspoon ground turmeric / 1/2 teaspoon ground cumin / 1 tablespoon Trinidad curry powder (Chief curry) / 1/4 Scotch bonnet or other hot red chili pepper, minced / 2 tablespoons shado beni or chopped cilantro leaves / 1 tablespoon canola oil / 2 roma tomatoes, chopped / Kosher salt and ground black pepper
Mix shrimp, scallions, onion, turmeric, cumin, curry powder, hot pepper, and cilantro together in a large bowl. Cover with plastic wrap and refrigerate for 2 hours.
Heat the oil in a large deep frying pan. Add the tomatoes and cook 1 minute. Add the shrimp mixture. Season with salt and pepper and mix well.
Add 3/4 cup of water and simmer until shrimp turn pink. Remove from heat and serve hot with rice.
