Mmm…Here’s what’s cooking in The Nite Lite Kitchen this week—exotic beef kebabs….

This recipe from the country of Georgia has a unique fresh flavor by incorporating pomegranate juice. I got this recipe from The World of Kebabs by Anand Prakash and it is simply delicious. Enjoy. Tom~

Beef Kebabs

Marinade:  1 cup pomegranate juice / 1 medium onion, grated / 1/4 cup olive oil / 2 Tbsp red wine vinegar / 2 Tbsp fresh chopped parsley / 1 Tbsp crushed coriander seeds / 1 tsp minced garlic / 1 tsp salt / 1/2 tsp freshly ground pepper

Kebabs:  2 lb top sirloin beefsteak, cut into 1 1/4-inch pieces / 10 long metal or presoaked wood skewers / 1 medium onion, quartered and layers separated / 2 bell peppers, seeded and cut into 1 1/4-inch squares / chopped cilantro for garnish

In a non-reactive bowl, mix all marinade ingredients. Add meat pieces and toss to coat thoroughly. Cover and marinate overnight in the refrigerator.

Drain marinade and reserve. Thread 4-5 pieces of beef alternating with onion and bell pepper onto each skewer.

Grill skewers over high heat for about 3-5 minutes per side, turning and basting with reserved marinade at each turn.

Serve with lettuce and tomato sprinkled with chopped cilantro leaves.
