This salad recipe is very easy to make and is absolutely delicious. Every time I make it, I’m asked for the recipe. It’s Fran’s mother’s favorite! Enjoy. Tom~
1 cup uncooked wild rice / Seasoned salt / 1/2 teaspoon ground cumin / 2 cups diced cooked chicken / 1 1/2 cups halved green grapes / 1 cup sliced water chestnuts, drained / 3/4 cup mayonnaise / 1 cup cashews
Cook rice according to package directions. Cool to room temperature. Spoon rice into a large bowl; add chicken, grapes, water chestnuts, mayonnaise, seasoned salt (your favorite) and cumin. Toss gently with a fork. Cover and chill. Just before serving, add the cashews. Serve on lettuce leaves or fill croissants. This recipe makes about 6 servings.
